But what exactly is the Fuji Wagyu Cross?
Fuji Wagyu Cross is a commercial crossbreed that results from breeding a 100% full-blood Japanese Wagyu with another breed, in this case, the Holstein cattle. This initial crossbreed is referred to as F1, while further crossing with Wagyu is known as breeding up. Crossbred Wagyu comes in different percentages, with F1 being 50%, F2 being 75%, and F3 being 87%. For those interested, traceability tracking is available on https://www.id.nlbc.go.jp/top.html?pc.

When it comes to beef, Kobe is widely regarded as the king, with Japanese Wagyu being a close second. The Fuji Wagyu Cross falls just below Japanese Wagyu in terms of quality. While it has less marbling than Wagyu, it still offers a full flavor and a silky texture that makes it perfect for steak.
Grading System
Similar to Kobe and Wagyu, the F1 Wagyu has its own grading system, ranging from A1 to A5 and B1 to B5. The grading system also applies to F1 Wagyu, with the best quality F1 ranked as B5. While there is no A5 grade for crossbred cattle, B5 Japanese F1 beef is often considered to be better than A2 Wagyu due to its more intense marbling pattern and tender texture.
