700g Kobe or Wagyu Block

1 tbsp Wagyu Tallow

1 Large Onion (grated)

1/2 Carrot (peeled and quartered)

2 Garlic Cloves (crushed)

4 Medium Potatoes (quartered)

1/2 Celery (quartered)

1 tsp Sea Salt
-
1 tsp Black Pepper

1 tbsp Cumin Seeds

1 tbsp Sage
-
1 tbsp Chives

Season the beef all over with sea salt and black pepper. Place it in a large bowl.

Add the onion to the bowl with the beef, toss to coat and refrigerate for at least 1 hour.

Heat the tallow in a non-stick frying pan over medium heat. Once melted, add the garlic and cook until it turns golden. Remove the tallow and garlic from the pan.

Add the beef to the pan and cook until browned all over.

Preheat the oven to 230°C fan/450°F/gas 8.

Place the beef onto a sheet of tin foil over a baking tray. Sprinkle the cumin seeds, sage, and chives over the beef. Place the carrot, potatoes, and celery over the beef and wrap it in the foil.

Transfer the wrapped beef to the preheated oven and cook for 30 minutes.

Once done, remove the beef from the oven and let it rest for 10 minutes before unwrapping it and slicing it into portions.
Serve the beef with your favourite red wine!
